It’s all about the dressing
This dressing is tangy, sweet, and full of flavor—perfect for drizzling, dipping, or shaking right into your favorite greens. All the good stuff, with none of the bad stuff - just real ingredients you already have on hand.
Zesty Spring Vinaigrette
Ingredients:
- 1 cup extra virgin olive oil
- 1/2 cup apple cider vinegar
- Juice from 1 lemon
- 1/2 tbsp Dijon mustard
- 1/2 tbsp honey
- 1 tbsp soy sauce
- 2 cloves garlic, finely minced or grated
- 1/2 tsp salt
- 1/2 tsp pepper
- Optional: 1 tsp finely chopped fresh parsley or basil
Instructions:
Add all ingredients to a mason jar, seal tightly, and shake well. Store in the fridge and shake before each use to mix up the layers. Keeps for up to 2 weeks—or up to 4 when vacuum sealed with the Mason Genie.

🌱Spring Market Chickpea Salad
A protein-packed mix that tastes as fresh as it looks. Perfect for sunny lunches or make-ahead meal prep.
Layer (bottom to top):
- 3 tbsp Zesty Spring Vinaigrette
- 1/2 cup chickpeas (rinsed + drained)
- 1/2 cup diced cucumber
- 1/2 cup halved cherry tomatoes
- 1/3 cup shredded carrots
- 1/4 cup crumbled feta
- 1/4 cup thinly sliced radishes
- 1/2 cup baby spinach or spring mix
- Top with toasted sunflower seeds
🌈 Crunchy Rainbow Slaw Jar
Bright, crunchy, and loaded with good-for-you veggies. This one holds up great for days in the fridge.
Layer (bottom to top):
- 3 tbsp Zesty Spring Vinaigrette
- 1/2 cup shredded red cabbage
- 1/2 cup julienned carrots
- 1/4 cup chopped yellow bell pepper
- 1/4 cup shelled edamame
- 1/4 cup thinly sliced green onion
- 1/2 cup chopped romaine or napa cabbage
- Sprinkle of black sesame seeds on top
🍋 Lemon Quinoa Veggie Jar
Light but filling, with a pop of citrus and a little crunch. Great for lunch breaks, hikes, or sunny picnics.
Layer (bottom to top):
- 3 tbsp Zesty Spring Vinaigrette
- 1/2 cup cooked and cooled quinoa
- 1/4 cup roasted sweet potatoes (diced)
- 1/4 cup chopped snap peas or green beans
- 1/4 cup crumbled goat cheese
- 1/4 cup grapes or apple chunks (tossed in lemon juice)
- 1/2 cup arugula or mixed greens
- Top with roasted almonds or pumpkin seeds
Tip: Add fruit the day of if prepping more than 2 days ahead.
