🧁🍓 Mini Cheesecake Jars (No-Bake!)

Cool, creamy, and dangerously easy—these no-bake cheesecake jars are your new summer obsession. Made to prep ahead, seal tight, and top with fresh fruit, jam, or whatever the garden’s giving you.

Summer’s overflowing—berries, stone fruit, homemade jam from last week’s canning marathon. These mini cheesecake jars are the perfect way to use it all. They’re rich, silky, and layered with buttery graham cracker crust... sealed fresh in mason jars with the Mason Genie so they stay fridge-perfect for days. Pack them for a picnic, stash a few in the fridge for guests, or bring them as a sweet little gift.

Vacuum sealing with the Mason Genie keeps them fresher, longer—and toppings like jam, fresh fruit, or crumbled candy can be added right before serving for max flavor and crunch. It’s garden-meets-decadence, no oven required.


Ingredients (Makes 8–10 jars)

For the crust:

  • 1½ cups graham cracker crumbs

  • 1 tbsp white sugar

  • 6 tbsp unsalted butter, melted

For the filling:

  • 1 cup heavy whipping cream

  • 8 oz full-fat cream cheese, softened

  • 2 tbsp sour cream

  • ½ cup white sugar

  • 1 tsp lemon juice

  • 1 tsp vanilla extract

  • Pinch of salt

Toppings (add just before serving):

  • Fresh garden berries or sliced fruit

  • Canned jam or compote

  • Crumbled cookies or candy

  • Whipped cream

Directions

1. Make the crust

  • In a bowl, mix graham crumbs, sugar, and melted butter until evenly combined.

  • Spoon 2 tbsp of the crust mixture into the bottom of each mason jar and press down firmly with the back of a spoon or your fingers.

  • Place jars on a tray and freeze for 10–15 minutes while you make the filling.

2. Make the filling

  • Whip the heavy cream with a hand or stand mixer on medium-high until stiff peaks form. Set aside.

  • In the same bowl, beat the cream cheese, sour cream, sugar, lemon juice, vanilla, and salt until smooth and fluffy (no lumps!).

  • Gently fold the whipped cream into the cream cheese mixture until no streaks remain.

3. Fill the jars

  • Spoon or pipe the filling over the crust in each jar, smoothing the tops.

  • Seal each jar with your Mason Genie to vacuum lock freshness.

  • Chill for at least 2 hours (or overnight) to set.

4. Add toppings & serve

  • Just before serving, top with fresh fruit, jam, crumbled cookies, or a swirl of whipped cream.

  • Serve chilled and enjoy!
