Make one for a friend, a neighbor, a teacher. The more jars you line up on the counter, the better they look!
The Green Question
Getting the batter green is key to this festive recipe. There are some great options:
Matcha Powder The easiest option to find. Most supermarkets stock it now, and it gives a beautiful soft sage-green colour with a very mild, slightly earthy flavour that pairs wonderfully with the sweetness of the batter.
Dried Spinach Powder This one surprises people every time. Blended dehydrated spinach gives a much brighter, more vivid green than matcha and you genuinely cannot taste it once cooked. Itâs also a great way to get in some of those daily greens! Even your picky eater wonât notice it. If youâre new to dehydrating, check out the Genie Dehydrator.
Can't find either? No problem. Just add a note on your gift tag suggesting the recipient add a drop or two of green gel food colouring to the wet ingredients before mixing.
Why layer instead of pre-mixing?
Layering keeps the jar looking beautiful for gifting and makes the recipe incredibly easy to assemble later. But thereâs another benefit: when the ingredients are layered in a mason jar and vacuum sealed with the Mason Genie, they stay protected from air and moisture, which helps preserve freshness and extend shelf life for months.
That means the recipient can store the jar in their pantry until theyâre ready to bake. When the time comes, they simply pop the seal, pour everything into a bowl, and mix. Fresh ingredients that all combines perfectly in seconds.
Ingredients:
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoons baking soda
- 1/2 teaspoons salt
- 2 tablespoons matcha powder OR freeze-dried spinach powder
- 3 tablespoons granulated sugar
- 3 tablespoons green shamrock or star sprinkles
- 1/3 cups white chocolate chips

How to Assemble the Jar
A funnel is your best friend here. It keeps each layer clean and prevents powder from dusting the sides of the jar. Take your time and tap the jar gently on the counter to settle each layer before adding the next.
Step 1 â Combine the dry base Whisk together the flour, baking powder, baking soda, green powder (matcha or dried spinach) and salt in a bowl first.
Step 2 â Layer the green flour base Pour the flour mixture into the jar and tap to settle.
Step 3 â Add the sugar Spoon in the sugar to create a clean white stripe on top of the flour.
Step 4 â Add the sprinkles Pour in the shamrock sprinkles for a festive burst of colour.
Step 5 â Finish with white chocolate chips Top with the white chocolate chips. They catch the light and make the jar look like a little treasure.
Step 6 â Seal and decorate seal airtight with the Mason Genie. Add on the band. Tie twine or green ribbon over the band and attach your gift tag (see below).

Print this out and tie it to the jar.
Empty the entire jar into a large bowl and stir well to combine. In a separate bowl, whisk together: 1 egg, 1Âź cups milk, and 2 tbsp melted butter.Pour the wet ingredients into the dry and stir until just combined â a few lumps are perfectly fine! Cook on a lightly greased griddle over medium heat, about 2 minutes per side, until bubbles form and the edges look set. Makes approximately 12 pancakes. Top with whipped cream, maple syrup, or lucky charms marshmallows for extra luck! âď¸

Tips & Notes
Use a wide-mouth jar. The larger opening makes layering a whole lot easier.
Use a funnel. Trust me, it'll keep everything easy and mess-free. Â We recommend using a high quality stainless steel funnel: this one is the last you'll ever need.
Shelf life. Sealed and stored in a cool, dry place, the mix keeps for up to 6 months when sealed with the Mason Genie â making it a great gift to prepare ahead.
Make it a set. Tie a small bottle of maple syrup or a bag of Lucky Charms marshmallows to the outside of the jar for an extra special touch.
Matcha vs spinach powder. Matcha gives a softer sage green with a mild pleasant flavour. Spinach powder gives a brighter, more vivid green with absolutely zero veggie taste once cooked. Both work beautifully.
